I’m not wearing much makeup at all right now given this quarantined state… and honestly, I don’t have much desire to even play with it. But when it comes to skincare, I haven’t missed a beat. 8 years ago, I had a car accident where my my car was totaled. I was shook to the core and I searched everywhere for a car that would make me feel like I was in bubble wrap. I finally found a car that I was in love with. There it was....."Mitsu" my Mitsubishi Outlander! The search was over and Mitsu was all mine! Mitsu was the first car I ever owned. So, now that you know my "relationship" with Mitsu, let's fast forward to around March, 2020 during the pandemic when the Coronavirus hit and we were in quarantine. Most days during quarantine, I would look out the window at poor Mitsu. There were days that I was so depressed that I didn't even want to turn Mitsu on and go for a spin around the block or lift my spirits with a drive along the beach. Mitsu was already giving me a bit of trouble here and there and was not as reliable as I needed it to be. At that point, I was already feeling depressed and hopeless for so many reasons, that I needed to do something to help others or give back and contribute in some way. I couldn't volunteer or do anything in person. I was helping in other ways with signing petitions, emailing, donating a few dollars here and there. There are so many places that need help, so when I decided I was going to donate Mitsu, I knew that I wanted to make a contribution to the autistic community. Autism is close to my heart so I researched online where I could donate my car. I had emailed a lovely woman named, Ellen at Autism New Jersey who told me that Autism New Jersey unfortunately did not have a partnership with a service that allows them to accept car donations but, she had personally donated her car to The Arc of the United States to benefit The Arc of Union County (where her brother receives services from them). She told me the process was very easy. I went on The Arc of New Jersey's website to learn more about who they are and what they do. Their mission statement read: "The Arc of New Jersey promotes and protects the human rights of individuals with intellectual and developmental disabilities and actively supports their full inclusion and participation in the community throughout their lifetimes; and is committed to enhancing the quality of life of those individuals and their families through advocacy, empowerment, education and prevention." Please note: the Foster Coalition does not run foster care closets. However, they have created this wonderful comprehensive list as a service to the foster care community. About the Foster Coalition What is the Foster Coalition? The Foster Coalition is a resource website for many things related to foster care. The mission is to make important information easy to find, whether you are a foster youth looking for support, a foster parent seeking a clothing closet, or a concerned person who wishes to get involved and support youth in care. ​How did the Foster Coalition get started? The Foster Coalition website was started by Leah Burdick, an adoptive mom. Leah was a blogger for the Chronicle of Social Change, and given her business background, she specialized in writing about innovative programs improving different aspects of foster care. As a rich source of vitamins, minerals + fiber, chickpeas may offer a variety of health benefits, such as improving digestion, aiding weight management + reducing the risk of several diseases. Additionally, chickpeas are high in protein + make an excellent replacement for meat in vegetarian + vegan diets. I personally prefer not to use liquid smoke in this recipe, so I left that as optional for you. But, I do love Annie’s vegan Worcestershire sauce which is key. It gives it a smoky, sweet, savory flavor with a delicious tang. My brother + father (both meat eaters) took a bite + said it tastes like real meatloaf...but even better! Whether you are a meat lover or not, this dish is for you! I love that this recipe is so healthy! It is so easy to create simple, yummy dishes that taste like the real deal. The homemade tomato glaze is absolutely mouth watering! It is a healthy, yummy all natural ketchup made without refined sugar. Ingredients: Loaf ○ 2 tsp coconut oil (I use: Dr. Bronner's) ○ 1/4 Cup of (chopped) red onion ○ 2 stalks celery (chopped) ○ 5 cloves garlic (minced) ○ 15 oz. can of chickpeas, drained + rinsed ○ 1 3/4 Cup of blended cooked mushrooms (cook then food process) ○ 2 tablespoons liquid smoke (Optional) ○ 3 tsp Annie’s vegan Worcestershire sauce ○ 1 1/4 Cup of stale gluten free breadcrumbs (I use: Food For Life: Ezekiel bread or Silver Hills Bakery, both at Whole Foods) ○ 1/2 tsp sea salt ○ 1/2 tsp ground black pepper ○ 2 flax eggs (I use: pasture raised Vital Farms brand - brown box + mix with ground flax-meal) ○ 3 tbs organic tomato paste ○ 3/4 tsp thyme (I use: Simply Organic brand but you can use fresh if you prefer) Homemade Ketchup Glaze ○ 2 tbs organic (no sugar added) tomato paste ○ 1 tsp maple syrup (I use: 365 brand, Dark Maple Syrup) ○ 2 tsp apple cider vinegar ○ 1 tsp Amy's vegan worcestershire sauce ○ 1/4 tsp sea salt Directions: 1. Preheat oven to 375 degrees Fahrenheit. Spray a loaf pan with coconut oil. It's definitely a good idea to line the pan with parchment paper, so it is easier to remove the loaf. 2. On a skillet, heat up coconut oil. Add garlic, red onions + celery. Saute until the onions are translucent + the celery is soft, so about 5 minutes. 3. In a large mixing bowl, add all of the ingredients, except the mushrooms. Gently toss until everything is coated. Then add in a food processor + pulse. Add in the mushrooms when everything is ~almost done~. You do not want to over pulse because it will turn into mush. You want to see chunks. 4. Add mixture into pan. Smooth down the top with a spatula then add the tomato glaze. Bake for about 45-60 minutes. Check with a toothpick or fork. If it comes out mostly clean then it is ready. 5. Remove from the oven + give it about 30 minutes too cool. Slice + enjoy! I'd love to see you make this recipe and tell me how it turned out! Not everyone at our house is plant based, so I make this Chicken Piccata dish every so often for my Dad + it's a big hit! It's super easy + quick to make too! Just have the ingredients on hand + you are good to go. Save some for leftovers too! It makes for a great reheated lunch or dinner. Just follow the directions below + there is literally no way to mess this recipe up! Enjoy + let me know how you like it too as I love hearing from you guys! Level: Easy Total: 40 min Prep: 15 min Cook: 25 min Yield: 4 servings Ingredients 2 skinless + boneless organic chicken breasts, butterflied + then cut in half Sea salt Ground black pepper All-purpose flour (I use: Bob's Red Mill brand - organic + non-gmo) 6 tablespoons unsalted butter (I use: Miyoko's plant based butter but this time I used Califia Farms plant butter w/ avocado oil) 5 tablespoons Avocado Oil (I love the Primal Kitchen brand) Enter my 10% OFF coupon code at checkout: DEROSA10 1/3 cup fresh lemon juice (I use: Santa Cruz Organic brand) 1/2 cup Vegetable stock (I use: 365 Whole Foods brand) 1/4 cup brined capers, rinsed 1/3 cup fresh parsley, chopped Directions 1. Season chicken with salt + pepper. Dredge chicken in flour + shake off excess. 2. In a large skillet over medium high heat, melt 2 tablespoons of butter with 3 tablespoons olive oil. When butter + oil start to sizzle, add 2 pieces of chicken + cook for 3 minutes. When chicken is browned, flip + cook other side for 3 minutes. Remove + transfer to plate. Melt 2 more tablespoons butter + add another 2 tablespoons olive oil. When butter + oil start to sizzle, add the other 2 pieces of chicken + brown both sides in same manner. Remove pan from heat + add chicken to the plate. 3. Into the pan add the lemon juice, stock + capers. Return to stove + bring to boil, scraping up brown bits from the pan for extra flavor. Check for seasoning. Return all the chicken to the pan + simmer for 5 minutes. Remove chicken to platter. Add remaining 2 tablespoons butter to sauce + whisk vigorously. Pour sauce over chicken + garnish with parsley. 4. For sides, I made turnip mash (mixed potatoes + turnips together) + bok choy. You can make whatever sides you like!
